In order to get rid of the bitterness and poison in the mushrooms, they are pre-soaked, after which they are marinated in salt in the cold. It is after these actions, the mushrooms turn into a wonderful side dish and a useful dish in winter and in summer. Let us consider in more detail how to pickulate freckles.

The recipe for pickling hot way

Let the salmon of freckles - a rather complex event, the result is worth it.

Ingredients

  • 1 kilogram of freckles;
  • dill;
  • currant leaves;
  • salt (without iodine);
  • cabbage leaves.

Preparation

  1. Clear the mushrooms from the leaves, earth and twigs.
  2. In the enamelware put the mushrooms and pour them for 5 hours with cold water.
  3. After 5 hours, repeat the procedure. After five hours, repeat the procedure for the third, last time.
  4. After 15 hours of soaking, remove the mushrooms and swing them into a colander.
  5. In an enamel saucepan, boil the water and put the waves in it.
  6. After the water boils again, cook for 15 minutes.
  7. After this time, take out the mushrooms.
  8. In a clean glass jar lay layers of mushrooms, salt and greens.
  9. Fill the jar not to the end, but from above press firmly with cabbage leaf.
  10. Tie gauze (two-three-layer) on the neck and put it on a month and a half in a cold place. The ideal storage temperature will be from 0 to +3 degrees of heat.

It is this recipe for salting that can be eaten even by people suffering from chronic gastritis, since it does not cause heartburn.

Salty freckles will best be combined with potatoes.

The recipe for salting in a cold way

There are several rules that must be observed when salting in a cold way - so you can quickly pick up your mushrooms without excess cooking.

  • Clean the freckles properly and rinse them with cold water with lemon juice and dissolved salt.
  • Do not use salt with iodine for the reason that it can cause your freckles to sour before the time.
  • Take your favorite seasonings, not focusing onrecipes. If you have already tasted the freckles, you should imagine that your taste will be combined with them: horseradish, black currant, umbrella dill, cloves, caraway seeds, black peppercorns, cloves of garlic, bay leaves and others.
  • Mix them in a separate container to subsequently use them as a layer.
  • Lay out layer by layer mushrooms, salt, spices / seasonings / greens.
  • Be sure to leave space on top,which you cover with leaves or a leaf of cabbage or a horse-radish that will appear near at hand. If the sheets do not stick, fix them with wooden sticks. All this is done to ensure that the pickle, which will appear after a while, did not evaporate, but salted your freckles.
  • Gauze is needed to ensure that the fungi received air.
  • The average duration of salting is 40 days. If you accidentally forgot to get it - do not worry, do not rush, because with mushrooms nothing will happen.
