The waves are considered conditionally edible mushrooms -this means that they require special cooking conditions. Before there are freckles, they must be soaked. So, the waves should be kept in pure water under pressure for at least three days, changing the water daily. If the freckles do not soak, then the taste of the fungi will be noticeably worse; in addition, it can cause severe food poisoning.

After the mushrooms are soaked, you can start the cooking process. Most often, the wavelets are salted. In one of our articles tells how to salt the freckles.

You can marinade and wave. For this, the caps are separated from the legs and cooked for about twenty minutes in salted water. After that, the mushrooms are mixed with a pre-prepared marinade from carrots, onions and spices, poured with vinegar and boiled for another 15 minutes on low heat. Only after this, the mushrooms are rolled into cans. Before eating marinated freckles you need to brew for a few days.

In addition, freckles can be fried, like anyother mushrooms. As a sauce for the waves are suitable sour cream or mayonnaise, as well as garlic sauce. Mushrooms go well with potatoes or rice. In rare cases, fried freckles are used as a separate garnish.
