Classic marshmallows

- gelatin - 30 g;
- water - 300 ml .;
- baking soda - 1 tsp;
- sugar - 1 kg;
- citric acid - 1 tsp.
Preliminary it is necessary to pour gelatin with water(100 ml.) And leave to swell for one hour. The remaining 200 ml. water should be poured sugar, put the syrup on the fire and boil for 5 minutes, then pour gelatin into it and beat it with a mixer until white (10-15 minutes). After this, it is necessary to pour into the capacity of citric acid and continue beating for 5 minutes, add soda and whisk for another 5 minutes.
Ready-made mass with a confectionery bagsqueeze out on a flat dish (it is convenient to use a pan covered with food film or foil for this purpose) and refrigerate for several hours.
Apple-vanilla marshmallows
This recipe for marshmallow is different from classiconly in that it adds apple sauce and vanilla sugar. The process of preparation of apple-vanilla marshmallow practically does not differ from the classical recipe.
To make it, you need the following ingredients:
- gelatin - 40 g;
- sugar - 1 kg;
- baking soda - 1 tsp;
- apple juice - 300 ml. (or water);
- citric acid - 1.5 tsp;
- sweet and sour apples - 2 pcs .;
- vanilla sugar - 20 g.
Preliminary preparation of gelatin and sugarsyrup is the same as in the recipe for cooking classic marshmallows. While sugar dissolves and gelatin swells, you can start preparing apples. They need to be cleaned, cut into small pieces, put on a baking sheet, sprinkle a little sugar and bake in the oven until cooked. Baked apples are cooled and rubbed through a sieve or mashed in a puree blender.
To the boiled sugar syrup is addedgelatin and apple puree. The resulting mixture must be whipped until the zephyr mass becomes white (usually 10 minutes is enough). Marshmallow in chocolate
