Preparation of mushrooms for drying

  3. Purified mushrooms need to be cut off the tips of the legs. Small mushrooms can be dried as a whole. Large mushrooms need to be cut with a sharp knife made of stainless steel, into thin (1-1.5 cm thick) longitudinal plates. You can do a little differently - separate the legs, cut them in short sticks, about two centimeters long, and cut the hats with plates.
  4. In slightly spoiled mushrooms, you need to carefully cut out all the damaged areas, and cut the remaining healthy pulp with thin plates.

  1. Small mushrooms can be strung on a stiff string andto hang mushroom knits in the sun. Mushrooms are threaded with a large needle. The needle is pierced with a leg, a string is threaded through it, a loop is made on the thread, so that the mushroom does not move to the center of the bundle during drying, and at a distance the next mushroom is fixed.

  4. Mushrooms when drying in the open air must always be covered with gauze, so that the flies do not put their eggs on them.
  5. At night, mushrooms are brought into the room, and in the morning, when the dew comes off, they are again exposed to the sun. Mushrooms dry up in about 10-14 days.

How to Dry Mushrooms in the oven

Mushrooms spread one layer on a baking tray,covered with parchment, and put them in a warm oven. First, the mushrooms are dried in a slightly open oven at t50 ° C for 3-4 hours, then they are dried at a higher temperature (about 65-70 ° C).
