Preparation of the dough

  1. In a large bowl, mixer, working at low speed, mix the eggs with salt and with sugar. Increase the speed of the mixer and whisk the eggs into the foam.
  2. Boil the water.
  3. Continuing to whip eggs at high speed, pour boiling water into the egg-sugar foam with a thin trickle. Do not worry, eggs will not fold!
  4. Pour the soda into kefir and stir the yogurt with a spoon.
  5. Slowly pour the yogurt with soda into the brewed egg mixture and whisk the base of the dough.
  6. Reduce the speed of the mixer, graduallyput all the flour in the bowl with eggs and yoghurt (you must first sift the flour) and mix a fairly liquid and homogeneous dough (without a single knead). If the dough seems thick to you, dilute it. Add a little boiled water or kefir to the dough.
  7. In the ready-made dough, pour in 3 spoons of butter and mix it with the dough.

How to bake pancakes

  • Pancakes bake in a small frying pan with low sides and one long handle. For baking pancakes on kefir it is better to use a special small pancake made from cast iron.
  • Pour the pancakes over a large fire, pour the dough on a hot frying pan.
  • To make the pancakes thin, small ladle pour a small portion of dough into the center of the pan and, quickly tilting the frying pan from side to side, distribute the dough over its entire surface.
  • Before pouring a new portion of pancake dough into a frying pan, each time lubricate its surface with a piece of fat (preferably unsalted), pinned on the teeth of the fork.
