  1. Basis for the sauce are dairy and sour-milk products, broths, oils.

  3. Flour can be fried in several ways. If the roasting goes to a strong state, the flour will turn brown and the smell of nuts. When the fry is weak, oil is usually added, the color of the flour does not change. Usually flour is used in dairy and sour cream sauces.
  4. To give the sauce a certain taste, tomato paste, mushrooms, vegetables, berries, alcohol (wine, beer, cognac, liquor, etc.), vinegar (fruit or wine) are added during the preparation.
  5. To add flavor to the sauce, various seasonings, fresh pepper, garlic (dried or fresh), herbs, herbs are added to the composition.
  6. To ensure that the sauce has a pronounced flavor and aroma, a slice of lemon, sorrel, sour, etc., is added to it.

Cooking method

  1. Washed basil leaves cut into large pieces.
  2. Grate the cheese on the grater.
  3. Garlic let through the crush.

  • 30 gr. butter

Cooking method

  • Melt the butter in a frying pan.
  • Fry the flour on low heat for a minute.
  • Slightly preheat broth and milk.
  • Pour in the pan first milk, then broth, stirring constantly.
  • Mix well the liquid and bring to a boil over medium heat.
  • Cook the sauce base for 3 minutes before thickening the foods.
  • Cheese grate and add to the frying pan.
  • Cook for 2 minutes before dissolving the cheese. If necessary, add warm milk or broth to the sauce to bring it to the desired consistency.
  • Keep in mind that during the cooling of the sauce will thicken.
  • Salt to taste.
  • If desired, a pinch of ground nuts can be added to this sauce.

Tomato and sour cream sauce

  • 2 tbsp. tablespoons butter
  • 2 tbsp. spoons of flour
  • 2 tbsp. spoons of tomato paste

  • a glass of sour cream
  • dried paprika
  • greenery

Cooking method

  1. Lightly fry the flour in butter.
  2. Gradually pour in water or broth, stirring constantly.
  3. Add sour cream and mix again.
  4. Add the tomato paste to the sauce and add salt to taste. Sauce mix well.
