Before you start cooking porkliver, you need to note a few nuances. It contains a lot of water and therefore refers to quickly deteriorating products. If you buy a chilled liver, then you can store it in the zero compartment of the refrigerator for no more than two days, but it is better to cook immediately or to deep-freeze.

If you want to get the most gentleliver, then before cooking, keep it a little in milk. With roasting, too, you need to be careful, because if you hold the pork liver for an extra 2 minutes on the fire, it will become dry and stiff. Also it is necessary to take into account that it will not be possible to completely get rid of the characteristic bitterness.

Pork liver dishes

So, the first recipe on how to cook a pork liver under sour cream. To prepare this dish you will need:

  • 400 g of pork liver;
  • 100 ml. milk;
  • 2 onions;
  • 1 tsp. European mustard;
  • 200 ml. sour cream;
  • vegetable oil (to taste);
  • 1 clove of garlic;
  • seasoning from a mixture of vegetables and spices (to taste);
  • 1 tbsp. l. flour;
  • salt (to taste);
  • 2 sprigs of parsley.

Finely chopped onions are fried in a frying pan inheated oil. Add the liver (cut into small pieces) and fry 10 minutes. In the meantime, you can prepare sour cream sauce. To do this, sour cream is mixed with flour and mustard, pour the resulting mass of liver. All that is in the frying pan, salt, sprinkle with spices, add parsley, chopped garlic and stew for several minutes.

The following recipe is pate from pork liver. For this we need the following dishes: - 200 g of pork liver; - 50 g. Of fat; - half a bulb; - the root of parsley; - 150 g of butter; - 1 tsp. cognac; - grated lemon peel (to taste); - pepper (to taste); - salt (to taste); - Grated nutmeg (to taste). The liver is cleaned of the film and cut into four pieces, the fat is cut into small pieces. We put the fat and liver into a frying pan with a little water. Add salt, parsley root, pepper and nutmeg, all put out until soft. When the mass cools down, it must be passed 3 times through a meat grinder, pour some cognac and warm it. In the cooled mass add whipped milk and mix everything.

  • 5 tablespoons of flour;
