Gooseberries are a very tasty and healthy berry,from which you can prepare as jam and compote for the winter, and jelly, wine and even home-made vinegar. This article describes how to prepare gooseberries with various interesting recipes.

How to prepare compote from gooseberries

Compote of gooseberry can be prepared as oneonly gooseberries, and with the addition of other varieties of berries and fruits. In addition, it can be a great drink not only for the winter, but also during the hot season. Therefore, in summer you can make compote of gooseberries in small quantities without preserving to quench your thirst with a fresh drink. Here is a very simple recipe for compote of gooseberries:

  1. On 1 three-liter jar is taken about 1 kg of berries, 0.5 kg of granulated sugar and 3 sprigs of fresh mint (at your discretion).
  2. Remove the tails on the gooseberry, rinse the berries and put in a colander.
  3. Banks sterilize, fill with gooseberry.
  4. Boil in a pan 3 liters of water, fill it with cans to the top, close the lid and leave for 10 minutes.
  5. Drain the water back into the pan, bring to a boil and repeat the procedure.
  6. Drain the water again in a saucepan, add sugar and cook for 5 minutes.
  7. Lay out mint leaves for berries, pour the prepared syrup in a hot form and close the lids.
  8. Cover the jars with a warm blanket and leave until cooling.

After that, you can shift the compote into the refrigerator.

How to make wine from gooseberries

The recipe for making wine from gooseberry is as follows:

  1. 1.5 kg of gooseberries cleaned, washed and kneaded with a spoon.
  2. From 1 kg of granulated sugar and 1.5 liters of water make a syrup, pour the gooseberries into glass containers, stir and leave at a temperature of 16-18 degrees.
  3. The top of the dishes should remain free so that the juice does not overflow: the contents should be mixed a couple of times a day with a wooden spoon.
  4. After a week, separate the juice from the mass with gauze, put the juice in bottles with natural stoppers.
  5. In the cork, make a hole through which to insert the rubber tube. Put the other end in a bottle of water, so that the carbon dioxide leaves during fermentation.
  6. After 6 weeks there will be a sediment, and the wine will become transparent. It is necessary to pour it into bottles and leave for another 2 months.

This wine should be stored at a temperature of up to 12 degrees and not longer than a year.

How to cook jam from gooseberries

Very popular is jam from gooseberry. To make the jam tender and homogeneous, you should carefully clean the berries from the peel.

  1. For 1 kg of berries you need 1 glass of water and 1 kg of granulated sugar.
  2. Gooseberry is cleaned and rinsed.
  3. On high heat, boil the berries in a small amount of water.
  4. When the gooseberry becomes soft, grind it in a sieve, put it back in a saucepan and boil it with the addition of sugar.
  5. When the mixture will stretch, and not drip, the jam will be ready.
  6. After cooling, put the mass in sterilized jars and roll up.
