Turkish baklava

To prepare a Turkish baklava, you will need the following ingredients:

  • 3 eggs;
  • 400 g. Of crushed pistachios;

For syrup:

  • half a lemon;
  • 1.5 liters. water.

Preparation:

  1. Sifted flour mixed with salt, add eggs and water to it and mix the dough.
  2. Butter butter, but from the water, sugar and lemon cook syrup.
  3. Lubricate the tray with oil. Turn on the oven and let it warm up to 180-210 ° C.
  4. Divide the dough into small pieces (about 40 pieces). Each piece of dough is rolled into a layer thick with a paper sheet.
  5. Lay the layers on a baking sheet on top of each other, sprinkling each layer with crushed nuts.
  6. We cut baklava into pieces (traditionally in rhombuses) and pour melted butter.
  7. We put baklava in the oven and bake for about 40 minutes. We remove the prepared baklava from the oven and soak it with syrup.

Layered baklava in Bulgarian

Ingredients:

  • 750 g of flour;
  • 50 g of yeast;
  • 1 tbsp. water;
  • 2 yolks;
  • 200 g of melted butter.

For filling:

  • 300 g of crushed walnuts;
  • 300 g of sugar;
  • 3 years of cardamom.

For impregnation:

  • 150 g of honey;
  • 100 grams of melted butter.

Preparation:

  1. We dilute the yeast with water and pour into a bowl. Gradually pour the flour, stirring the dough with a spoon.
  2. Well knead the dough with your hands for 15 minutes. Cover with a towel and leave for 40 minutes.
  3. Divide the dough into 14 parts, roll them into layers and lubricate with melted butter.
  4. We grease the baking tray, put three layers on it (with a pile) and pour on the layer 1/5 of the nuts mixed with sugar and cardamom.
  5. We stack four layers on top of each other. To form one layer we lay the dough layer, then one more layer, top - the filling.
  6. Cover another layer of three layers of dough (without the filling) and grease the top of the baklava with egg yolk.
  7. We cut (not cutting to the end) the future baklava rhombs and send it to the oven heated up to 180-200 ° C.
  8. After 10 minutes of baking, fill it with melted butter and continue the oven for another 20 minutes.
  9. Melted hot baklava is poured on the lines of incisions with melted honey and leave to cool.

Baklava from ready-made puff pastry

Ingredients:

  • 3 sheets of puff pastry;
  • 300 g of crushed walnuts;
  • 3 egg whites;
  • 1 yolk;
  • 1 tbsp. Sahara;
  • 50 g of butter;
  • 50 g of honey.

Preparation:

  1. For the filling, whisk the proteins into a thick foam and mix them with sugar and nuts.
  2. Spread the first sheet of dough on the baking tray and spread it over half the cooked stuffing.
  3. Cover with the second layer of dough and spread the stuffing again.
  4. We put the third layer of dough on top and lubricate it with yolk.
  5. We cut the baklava into diamonds as in the previous recipe, and put it in a preheated oven to 200 ° C for 10 minutes.
  6. After that hot baklava is poured with honey, melted with butter.
  7. We again send the baklava in the oven for 10 minutes and bake until golden brown.
