Brioches with poppy seeds

Brioche is a bunFrench recipe. According to legend, the French culinary expert Brio-Sha cooked dough for buns, but could not immediately start baking and put it in the fridge. The next morning it was supposed that the dough was gone. But to the amazement of Brio-Sha, it began to rise in form and did not lose its properties at all.

So, what we need:

For the test:

  • Flour - about a kilogram
  • Butter - 200 g (soft)
  • Eggs - 4 pcs.
  • 1 yolk for lubrication
  • Yeast - 2 tablespoons granulated, or - 40 gr. brewers
  • Kefir - 300 ml
  • Sugar - 100 gr

For poppy paste:

  • Milk - 100 ml
  • Poppy - 100 gr
  • 4 tbsp. spoons of sugar
  • 1 protein

We brew yeast in kefir (yogurt should be slightly warmed up - to a warm state).

Then add sugar, eggs, butter and 1 pinch of salt.

Stirring the dough, add the flour gradually. As soon as the dough ceases to stick to the cup - stop pouring in the flour.

Form the dough into a round shape, cover with a lid and put it in the refrigerator for 12 hours.

Prepare the paste from the poppy: pour poppy milk, rye in a mixture of 4 tablespoons sugar and leave until the poppy swells. Then put on a slow fire and cook for 20-30 minutes. Cool, add protein and rub. Pasta is ready.

We take out our dough from the refrigerator and put it in a warm place. It should brew and rise, increasing by 2 times. When this happens, it will need to be slightly crushed.

Roll out the dough to medium thickness. Spread poppy paste on the whole surface and roll into a roll.

Now cut the resulting roll into pieces. Approximately with a distance of 4-5 cm. We spread each piece on the baking sheet, turning it vertically. In general, you will get somewhere 10-12 buns. Leave to stand for about an hour, so that the dough rises.

Lubricate our buns with yolk and send it to the oven (180-200 degrees) for about half an hour. When the dough is browned well - you can take it out.
